Crab-Quiche Recipe

INGREDIENTS

1 pastry shell (9 inch) partially baked

1 tablespoon butter

2 tablespoons shallotsminced

1 cup crabmeat flaked

1 tablespoon all purpose flour

1 1/2 cups Swiss cheese shredded

3 eggs

1 cup half and half

1/2 teaspoon salt

A dash Tabasco Sauce

A dash nutmeg

Fresh parsley minced

METHOD

Step One Partially bake the 9-inch pastry shell

Step Two Gently saute the shallots in butter until tender for around 2 minutes. Mix with the crabmeat and the flour. Set the mix to one side

Step Three Sprinkle 3/4 cup of the cheese into the pie shell, then spread evenly with the crab mixture

Step Four Sprinkle with the remaining 3/4 cup of cheese.

Step Five Beat the eggs, cream, salt, pepper, nutmeg and parsley until they are well mixed.

Step Six Pour into the pie shell.

Step Seven Bake for around 25 to 30 minutes at 350 degrees F.

Crab Quiche Recipe

INGREDIENTS

1 cup crab meat

1/2 cup mayonnaise

2 tablespoons all-purpose flour

2 eggs beaten

1/2 cup milk

1 cup Swiss cheese diced

1/2 cup green onions chopped

1 (9 inch) pie crust unbaked

METHOD

Step One Preheat oven to 350 degrees F (175 degrees C).

Step Two In a medium bowl, beat together eggs, mayonnaise, flour, and milk until thoroughly blended.

Step Three Stir in crab, cheese, and onion.

Step Four Spread into pie shell.

Step Five Bake for 40 to 45 minutes, or until a knife inserted in the center comes out clean
