Crab Casserole
INGREDIENTS
12 ounces cooked medium shrimp cut into thick chunks
8 ounces lobster meat in chunks
6 ounces fresh crabmeat flaked
4 ounces mushrooms
1/4 cup butter
1/4 cup flour
2 cups milk
2 tablespoons dry white wine
1/4 teaspoon paprika
2 teaspoons chives chopped
1 teaspoons parsley fine chopped
3 tablespoons Parmesan cheese
Salt and black pepper
METHOD
Step One Butter up a casserole dish
Step Two Combine all the seafood together, then sauté the mushrooms in butter, allow to cool and then add in.
Step Three Gently melt the butter over low heat. Then stir in the flour until smooth.
Step Four Gradually add in the milk while stirring constantly.
Step Five Continue to simmer over low heat, stirring constantly, until it thickens and has a bubbly texture.
Step Six Stir in the seasonings and white wine and combine well.
Step Seven Gently stir the sauce into the seafood mixture.
Step Eight Sprinkle with Parmesan cheese.
Step Nine Bake at 350° for 20 minutes. Finish off under the broiler for around 1-2 minutes until the top browns and then serve.
