TRY THIS EASY CRAB CAKES RECIPE
Jumbo Lump Crab Meat 1 lb (500g) of the best quality white lump crab meat. Pick through the meat and make sure all shell and cartilage is gone.
White Sandwich Bread 6-8 slices of firm white bread, cut off the crusts, to make 3 cups of bread crumbs.
Olive Oil 2 tablespoons, and suggest using Light Olive Oil
Mayonnaise ½ cup of mayonnaise (Hellmans) or make your own for the best results
Fresh Eggs 3 large medium sized egg, beaten.
Celery Stalks 1 stalks, chopped fine
Onion ½ cup fine chopped
Chives ¼ cup fresh chives chopped
Parsely 2 tablespoons chopped
All Purpose Flour 6 tablespoons
Ground Black Pepper Fresh ground pepper to taste
Sea Salt Add a pinch to taste
HOW DO YOU MAKE THIS CRAB CAKES RECIPE?
STEP ONE Grind the bread into fine crumbs using your food processor.
STEP TWO Sauté the celery and onion in olive oil in skillet over a medium heat for 5 minutes.
STEP THREE Place 2/3 cup of bread crumbs, chopped chives, parsley, and ½ cup mayonnaise into bowl and mix well, then and in the crab meat and carefully mix. Season with black pepper and salt. Gently fold together all the ingredients together until they are well combined
STEP FOUR Gently scoop out the crab mixture to make 12 small 2 ½ inch patties (an ice cream scoop works best). Place on a plate and gently form each into a ¾ inch thick patty.
STEP FIVE Cover the crab cakes (foil or clingwarp is okay) and place in the refrigerator for 1 hour, or as long as you want. This will help to keep the crab cakes in shape and stop them crumbling.
STEP SIX Place the flour in a small mixing bowl. Crack the eggs into another bowl and whisk them together. Place the remaining 2 cups of breadcrumbs in another bowl.
STEP SEVEN Coat each pattie with flour, then dip into the beaten egg mixture, then into the breadcrumbs.
STEP EIGHT Gently fry the crab cakes in either light olive oil or vegetable oil in a skillet over medium heat. Fry for 5 to 6 minutes then turn crab cakes over and fry the other side until they are golden brown. Resist the temptation to turn them over several times, once will do otherwise they may break up
STEP NINE Serve your Crab Cakes Recipe with your favorite sauce and garnishing. Suggest perhaps a Basil Mayonnaise
