Cold Crab Salad

There are many types of crab. Up in Maine and some areas of Canada, they have what are known as peekytoe or bay crab. Down the east coast they have the blue or soft shell crab and in particular in Maryland.
When you head further south they have the stone crab and they have big numbers in Florida. The Stone crabs are caught and the claws taken and then the crab is released. The poor crab regrows its claws, although it must make feeding bit hard.
Both the North Pacific and North Atlantic oceans have large numbers of snow crabs, or spider crabs, and also opilio crabs, rock crabs or queen crabs. The Dungeness crab is also a common menu item the West Cost in the winter.
INGREDIENTS
1 pound crabmeat fresh lump crab meat works best, you can use canned or even imitation crab sticks
5 pounds potatoes red seems to be the best for this
1 onion finely chopped
Green onions a bunch of these finely chopped
5 Dill pickles finely chopped
2 cups mayonnaise use home made or Hellmans
1 package dry ranch dressing
Black pepper freshly ground
METHOD
Step One Peel and then boil the potatoes in lightly salted water.
Step Two Drain when they are tender and allow to cool
Step Three Mix all ingredients well, season to taste and then refrigerate for 4-8 hours or even overnight
