Chili Crab
MARINADE INGREDIENTS
2 tsp chilli powder
2 tbsp cumin powder
1 tbsp coriander powder
4 cloves garlic finely chopped
5 cm ginger finely chopped
10 cm lemon grass bruised
CRAB COOKING INGREDIENTS
1 large mud crab (3 lbs)
1 teaspoon chilli powder
3 tablespoons grated fresh coconut
1 teaspoon cumin powder
2 teaspoons coriander powder
1 teaspoon fenugreek
40 fresh curry leaves
1 cup water
2 teaspoon turmeric
1 tablespoon tamarind
1 tablespoon white vinegar
1 x 400 ml can coconut milk
2 tablespoon brown sugar
3 tablespoons fresh lime juice
METHOD
Step One Wash and scrub the crab well
Step Two Break off the claws and leave the legs attached
Step Three Remove main shell of the crab along with the feathery gills
Step Four Cut the crab body in half
Step Five Put the crab pieces into a colander, and then sprinkle with some chilli, cumin, cilantro (coriander), fenugreek and curry leaves
Step Six Put the grated coconut, chilli, cumin, coriander, fenugreek and curry leaves into a large sauce pan
Step Seven Gently dry fry the spices until the coconut is roasted and the spices have that wonderful aromatic smell
Step Eight Add in the crab pieces and then follow that with the spice marinade
Step Nine Add in the water, turmeric, tamarind and vinegar
Step Ten Bring it all to the boil and then add coconut milk
Step Eleven Gently simmer for 10 minutes until the crab turns red
Step Twelve Add in the fresh cilantro leaves
Step Thirteen Gently simmer for another 3 minutes
Step Fourteen Finally add in the lime juice and brown sugar, then mix it in well and remove from heat. Serve up and enjoy
