1 pound Maryland Blue crab meat This can be fresh or canned.
1 egg lightly beaten
2 teaspoons Worcestershire sauce
1 teaspoon seafood seasoning
1 teaspoon dry mustard
½ cup cracker or bread crumbs
¼ cup mayonnaise
¼ teaspoon white pepper
METHOD
Step One Clean and pick all the shell and cartilage from the crab meat.
Step Two Mix the egg, mayonnaise, seafood seasoning, white pepper, Worcestershire sauce and dry mustard together in a large bowl, combine well.
Step Three Add in the crab meat and fold evenly through the mixture
Step Four Add in the cracker or bread crumbs and evenly fold in.
Step Five Shape the mixture into 6 crab cakes patties.
Step Six Heat cooking oil in a large heavy frypan and then sauté for around 4 minutes per side.
Step Seven Cook until they are golden brown.
Step Eight Drain on absorbent kitchen paper towels and serve and then eat your great Blue Crab Cakes

INGREDIENTS
1 pound backfin or lump crab meat picked and flaked
1 large egg lightly beaten
3 tablespoons mayonnaise
1 1/2 teaspoons dry mustard
3 tablespoons fresh parsley minced finely
1 teaspoon Old Bay Seasoning
1 teaspoon Worcestershire sauce
2 dashes of Tabasco Sauce
1/4 teaspoon black pepper
3/4 cup crackers finely crushed
1/4 teaspoon salt
1 tablespoon unsalted butter
2 tablespoons vegetable oil
METHOD
Step One Place the egg, mayonnaise, mustard, parsley, Old Bay Seasoning, Worcestershire sauce, Tabasco, salt and pepper in a large bowl and whisk together.
Step Two Add in the crab meat and then the 1/4 cup of the Saltines crackers, and then gently fold the mixture together.
Step Three Spread the remaining 1/2 cup Saltines onto a plate. Form the crab mixture into 8 crab patties. Make sure that each pattie is well coated with the crackers.
Step Four Place the crab cakes on a baking sheet covered with wax paper.
Step Five Heat the oil and butter in a large heavy frypan or skillet over a moderate heat. When the initial foam subsides sauté the crab cakes.
Step Six Fry for around 2 minutes on each side until they are golden brown and then enjoy your Blue Crab Cakes

INGREDIENTS
2 cups backfin crab meat picked and flaked
2 large eggs lightly beaten
1/2 cup heavy cream
1 teaspoon dry mustard
2 teaspoons Worcestershire sauce
2 teaspoons fresh parsley chopped finely
2 teaspoons onion grated
1 cup fresh bread crumbs
2 tablespoons unsalted butter
METHOD
Step One Combine the crab meat and bread crumbs in a bowl
Step Two Whisk the eggs well and add cream in a small bowl.
Step Three Add the cream mixture, Worcestershire sauce, parsley, onion and salt and pepper to taste to the crab mixture and then combine well
Step Four Heat 1 tablespoon butter over moderate heat until the foam subsides then drop half of the crab mixture by tablespoon measures.
Step Five Cook the crab cakes until they are golden brown, this takes around 2 to 3 minutes per side. Repeat with the remaining tablespoon of butter and crab mixture and enjoy the Best Blue Crab Cakes.
