Everyone has a favorite crab cake recipe and as to the best, well they are all they best, but some are better than others.
It is all a matter of taste of course! While the whole quest for the perfect crab cake recipe.
Like many people, for me the perfect crab cake has little filler and an abundance of sweet tasting crab meat that is enhanced by other flavors and is not overwhelmed or lost within the other ingredients.
If that is the case then its an expensive failure. The best crab cake recipe is one of balance and finely tuned amounts of each ingredient
THE BEST CRAB CAKE RECIPE - NUMBER ONE
INGREDIENTS Serves 4 people
1 pound Crab Meat You can use lump or back fin, and flake and pick it over
2 tablespoons Fresh Parsley Chopped finely
1/2 teaspoon Dry Mustard Dont get a variety too strong as it will overwhelm the taste
1 Teaspoon Worcestershire sauce Lea and Perrins of course!
2 Large Eggs Beaten gently
2 tablespoons Mayonnaise Use low fat type as its less oily
1/2 cup White Bread Crumbs
1 teaspoon fresh lemon juice Use fresh squeezed juice, alternatively a half teaspoon of lime works great
Salt and Black Pepper Add to taste.
Panko Crumbs The Japanese give a lighter texture to the outside
Unsalted Butter and Oil I have used Light Olive Oil and also Peanut oil for a taste variation although Canola works fine.
METHOD
Step One Place the chopped parsley, mustard, Worcestershire Sauce, beaten eggs and the mayonnaise in a large bowl and mix together.
Step Two Add in the flaked crab meat and the bread crumbs
Step Three Season the mixture with salt and fresh ground black pepper. Gently fold the mixture together so that crab meat isn’t broken up
Step Four Divide the crab mixture into 8 even portions. Form balls from each portion and then gently flatten them to form crab cake patties.
Step Five Place each crab cake pattie in the panko crumbs and lightly pat to ensure it is covered
Step Six Place on a plate and place in the refrigerator for 30 minutes.
Step Seven Heat the butter and a little cooking oil in a heavy frypan over a medium heat.
Step Eight Cook the crab patties in twos and gently fry for 4 minutes, then turn over and cook for 4 minutes on the other side. Don’t overcook! Watch that the pan heat isn’t too great. Resist the temptation to turn more than once as it can cause the pattie to break up
Step Nine Remove the patties from the fry pan and drain on paper towels.
Step Ten Serve while hot with your favourite sauce

INGREDIENTS Serves 4 Poeple
1 pound jumbo lump crabmeat picked over and flaked
1 cup mayonnaise use a low fat variety or make your own
1 large egg beaten lightly
1 tablespoon Dijon mustard
1 tablespoon Worcestershire Sauce
1 cup Saltine crackers finely crushed
1/2 teaspoon Tabasco Sauce
1/4 cup plus 2 tablespoons Grapeseed oil
1/4 cup extra virgin olive oil
1 1/2 tablespoons lemon juice freshly squeezed
1 garlic clove peeled and chopped
Cayenne pepper
Sea salt
METHOD
Step One Whisk the mayonnaise in a large bowl.
Step Two Slowly whisk in the olive oil and 1/4 cup of the grapeseed oil.
Step Three Add in the fresh lemon juice and then season to taste with the Cayenne pepper.
Step Four Then transfer 1/2 cup of the mayonnaise to a small bowl and set aside.
Step Five Mash the garlic to a paste and season with salt.
Step Six Whisk the garlic paste into the small bowl of mayonnaise and then set aside
Step Seven Gently fold in the crabmeat with the cracker crumbs, the beaten egg, mustard, Worcestershire sauce, Tabasco Sauce and the reserved 1/2 cup of mayonnaise
Step Eight Shape the crab cake mixture into six crab cakes and then place on to a plate.
Step Nine into the refrigerator for one hour.
Step Ten Preheat your oven to 400° F.
Step Ten Place the 2 tablespoons of grapeseed oil in a large heavy frypan or skillet.
Step Ten Add in the crab cakes and then cook on medium heat for around 4 minutes.
Step Ten Carefully turn over the crab cakes and transfer them to the oven and bake for 10 minutes.
Step Ten Transfer the golden brown crab cakes to your serving plates and then serve with the garlic aioli made earlier, alternatively use your own favourite sauce.
